Apple Muffins

I started out on a mission this morning! At sunrise I decided to give it a whirl at making some gluten-free apple muffins.

I used the recipe from the Bob’s Red Mill Website.

The Brazilian apples here are small, so I grated two instead of one. I grated one with the peeling and one without the peeling. The recipe called for oatmeal. Since I did not have any, I crushed up some corn flakes for a little texture.

Sometimes it is fun to start out with a recipe and tweak it to your kitchen and what is available.

Life is a lot like cooking! You take what is available and make the best of it. You might even surprise yourself by how well things go with a little optimism and diligence and adding in a bit of this or that to create something special!
